Scampi Buzara
After a day of sailing, hunger comes: Klaus Pitter is cooking scampi buzara for his Pitter Racing Team during the ship test of the new Bavaria Cruiser 46 OD Avior in Croatia in 2021.
A culinary highlight during the sailing trip in Croatia
Anyone who has ever sailed in Croatia knows that Scampi Buzara belongs on the plate at least once during the trip. After all, it is one of the most popular dishes among Croatia's tourists. For all those who like to cook on board, we are sharing Klaus Pitter's own recipe here. The dish is easy to make and it only takes about 30 minutes.

Ingredients for 4 persons

1 kg scampi

1 big onion
-
2 garlic cloves
-
500 g tin tomatoes (passed or diced)

some breadcrumbs or old grated bread

400 ml dry white wine

Olive oil

Parsely
-
Herbs and chili to taste, rosemary, basil, thyme

½ lemon, salt, pepper

Vegeta, Croatian spice mix

300 g tagliatelle/ribbon pasta
Easy preparation in approx. 30 minutes
Step 1: Cut the onion and garlic into small pieces and sauté in olive oil in a large pan until translucent. Add the scampi and continue to sauté while stirring. Season with pepper, Vegeta, herbs and chili to taste.
Step 2: Deglaze with white wine and bring to the boil, then add the tomato passata. Depending on the amount, cover and let simmer for about 15 minutes.
Step 3: In the meantime cook the noodles.
Step 4: After the 15 minutes, add the breadcrumbs to thicken and stir vigorously. Finally sprinkle the freshly chopped parsley on top and serve with the pasta.
